Difference between 'being the chain' and just a 'link in the chain'.

Looks like he has the weak points covered...irrigation and processing. I'd be interested in seeing his menu.

I'm always interested in these attempts to do grass-fed on an industrial scale. I was approached a few years ago by a venture capitalist out of Toronto who saw the potential of our beef production system and wanted to do it on a grand scale. They paid me for my opinion so I spent a bit of time working through a model with them but ultimately it came to nothing. Money was not a problem, they would buy the land, the cattle, build processing facilities, build or rent freezer space to store seasonal production and buy retail space in Vancouver, Toronto and elsewhere.
The problem was the management - they didn't get that you can't just go out and hire a farm worker with the ability to manage the grass and the cattle to the standard needed on thousands of head of cattle over tens of thousands of acres. I certainly couldn't do it with all the variables of weather, grass and genetics. It frustrated me at the time that I couldn't convey this to them and I'm sure they thought I was throwing up roadblocks for the sake of it.
Looking back I realize now that one of the greatest strengths of family farm grass-fed production systems is the attention to detail we can apply on our small scale that would be very hard for an industrial scale model to duplicate and produce the same quality of product.
